Every day we sit to eat amazing lunches with our national volunteers in a bakery called La Esperanza. It was created and is run by the women’s association we came here to support: Adescom FM.
Most days we support them in other ways - by spending most of our money on their delicious cakes!!
There is one in particular that stands out. I’m not sure if it is originally from El Salvador, but it is amazing and should be shared! It’s the Volteado de Guineo or to us, the upside-down banana cake. You could fool yourself to think it’s healthy as it involves fruit, but that would be a lie…this is a sweet treat that everyone should try!!
Ingredients
• 12oz plain white flour
• 1lb/10 oz sugar
• 7oz margarine
• 4 eggs
• 1 spoon of banana flavoured vanilla essence
• 2 spoons of baking powder
• 2oz powdered milk or half a cup of liquid milk
Topping
• 8oz sugar
• 8 bananas
Instructions
Topping
1. Line the tin that you are going to use to make the cake with butter or lard.
2. Melt the sugar into the tin. Put it over a low flame until it caramelises.
3. Put it in the fridge to cool.
4. Once cooled, apply a layer of butter or lard on top of it.
5. Cut the bananas in half (length ways) and put on top of the caramelised sugar, covering it completely.
6. Pre-heat oven at a high heat to prepare for baking.
Cake
1. Cream together the margarine and the sugar in a bowl for 5 -10 minutes.
2. Add the eggs, one by one, keep mixing.
3. Add the banana flavoured vanilla essence – keep mixing.
4. Then add the milk – keep mixing.
5. Fold in the flour, little by little. Do not stir.
7. Put cake mixture on top of the caramelised onions and bananas.
8. Put it in the oven and turn down to a very low heat.
9. It should take an hour to bake.
